Baked Salted Chicken



Another bake and simple salted baked chicken without the hussle of using a lot of salt like the traditional way to prepare this dish.The result is still as good and yummy.

Ingredients:
4 whole chicken legs
2 tbsp hua tiow wine
2 thsp sand ginger
2 tbsp salt
8 slices dang gui
dash of pepper

4 pieces parchment baking paper

Method:
1.Marinade chicken with hua tiow wine,sand ginger.salt and pepper and dang gui.
2.Wrap each chicken with parchment paper.Bake in preheated oven at 220 degree C for 30 minutes.Remove and serve hot.

Bake Salmon With Golden Mushroom



Ingredients:
1 piece of salmon
1 bunch golden mushroom
1 piece of bacon-chopped
some chopped garlic
some butter

Method:
1.Prepare baking parchment paper big enough to wrap the fish.
2.Arrange golden  mushroom add some butter.
3.Then top with fish.
4.Top with bacon.
5.Lastly add garlic and some butter again.
6.Wrapped fish up.
7.Bake @ 200 degree for 15 minutes,can also use happycall pan to cook .



A very simple and yummy dish no need to do any cleaning up of splatters.Serve with some microwave broccolli.

Cranberries and raisins Scones


These scones recipes was taken from Yum Yum recipes book.

INGREDIENTS
A

250 gm plain flour
15 gm baking powder
30 gm castor sugar
100 gm milk powder
1 gm salt

B

120 gm butter
30 gm raisins
30gm cranberries,soaked both dried fruits in hot water and drained
100 ml milk

Some beaten egg for brushing

METHOD
1. Put ingredients A into a mixing bowl add in butter and rub together with finger-tips until mixture resemble breadcrumbs.
2. Add dried fruits and milk mix lightly till well combined. Do not over knead.
4. Roll out dough into 2.5 cm thickness and cut into desired shapes. Brush with egg.
5. Bake in preheated oven at 180 degree for 18-20 minutes. Serve with jam.

Coconut Rose


I made these coconut rose today which i learn from my cooking teacher more than twenty years ago a very nice and fragrant kueh from rich aroma of pandan juice.


INGREDIENTS

3 cold eggs
45 gm ovalette (sponge stabiliser)
200 gm coconut milk
100 gm pandan juice
250 gm fine sugar
450 gm Hong Kong flour
3 tsp baking powder

METHOD

1. In a mixing bowl add in all the ingredients. Beat at high speed for 10 minutes till the batter is very thick.
2. Place paper cups in tarts moulds.Spoon mixture into paper cups till 3/4 full.
3. Steam for 15 minutes.

Mint and Butter Chicken

I cook this dish today recipes taken from my favorites recipe book Yum Yum , a simple to cook dish using mint leaves very rich and fragrant.

Ingredients
3 whole chicken legs cut into pieces
3 tbsp butter
30 gm mint leaves-chopped coarsely

Marinade
1 tsp salt
1 tsp ground black pepper
3 tbsp cornflour

Seasoning
100 ml milk
1/2 tsp salt
1 tsp sugar

Method
1. Marinade chicken with marinade for 30 minutes.
2. Melt butter in a pan , pan-fried chicken till golden brown on both sides and cooked through.
3. Add seasoning, stir fry over high heat and till well mixed.Lastly add in mint leaves. Dish and serve.

Pan Fried Fish with Mirin

Ingredients:

3 slices of fish fillets
1 tbsp plain flour
1/2 tsp salt
a dash of pepper

Sauce:
1 tbsp mirin
1 1/2 tbsp light soya sauce
1 tbsp water
1 tbsp tomato ketchup

Method:
1. Marinade fish with salt and pepper dust with plain flour before pan frying fish with oil till golden.
2. After fish is cook add in all the sauce ingredients and cook awhile, add in some chopped garlic.
3. Ready to serve.


A very easy and nice dish using only a few ingredients. Enjoy!This recipes is from  Taiwan cooking programme from TV.

Bread


                                         Bread dough after proofing.

Made the above bread cos want to try making these bread using my breadmaker only mixed the dough using maker and after that take out the dough to proof and bake in oven.Used the above cute small loaf tins my friend Penny bought for me, made three loaves two loaves closed cover and one did not.Thanks Penny for the loaf tins so cute and lovely and the  bread turn out nice and very tasty.

Today i cook nasi lemak with the above side dishes,assam pedas prawns,pan-fried chicken winglets marinade with spices and kunyit pan-fried using happycall pan.

I cook this using pressure cooker it takes only 20 minutes to stew the chicken, another chinese new year dishes very yummy.A very versatile dish you can use whatever mushrooms you like and also add any vegetables to your liking. I learn this dish from a cooking class from a chef with these recipes you can come out with many different recipes using this cooking method.

Red Rice Yeast Chang with black pepper pork



Made these red rice yeast chang recipes from yumyum magazine with some modifications the recipes only use pork but i add mushrooms and black fungus. A very special chang cos we like red rice yeast no need to boil the chang just steam for 45 minutes faster and easier good for people learning to wrap dumplings cos no need to worry the chang dropped out during boiling process.

Grilled Spicy Fish



Another dish using HappyCall Pan simple ingredients and taste wise also quite nice.

Ingredients
300 gm any fish fillet of your choice

Marinade
2 tbsp spicy soy bean paste
3 tbsp plum sauce
1 big onion sliced

Method
1. Wash fish and pat dry, marinade with marinade for half an hour.
2. Heat up happycall pan.
3. Use 1 tsp oil to brush the pan.
4. Cook fish for about 7 minutes turn over and cook again till golden brown.
5. Serve hot and enjoy!

Grilled Char Siew

Ingredients
300gm pork (suppose to use pork belly but i use lean meat)

Marinade
1 tbsp chopped garlic
30 gm red fermented beancurd
1 tbsp honey
30 gm sugar
1/2 tbsp oyster sauce
1/2 tsp dark soya sauce
1/2 tsp five spice powder
1 tbsp rose wine
some red colouring (i omitted)

METHOD
1.Wash pork pat dry,cut into pieces.
2. Combine all the marinade and marinade pork for a few hours in fridge.
3. Grill using oven till cooked or can use HappyCall pan to cook it.
4. Turn over pork after grilling for 10 minutes and continue to grill till golden.Slice and serve. Enjoy!

Penang Char Kueh Kak


Fried Char Kueh Kak use ready made carrot cake from NTUC fry with dark soya sauce ,chai poh,lots of garlic, chilli,bean sprouts and kuchai also must add dash of pepper and fish sauce.Very yummy minus the oil healthier version.When you miss penang hawker food this is quite close except without the bak yu bits.Another dish using HappyCall pan to cook.

Pan Fried Chicken with Mandarin oranges salad


Cook this easy dish using mandarin oranges cos everyone at this time of the year got a lot at home so use it as salad very refreshing and healthier cos add fruits in our dishes after the cny feasting.


INGREDIENTS
4 chicken thigh deboned
1/4 geen apples-cut into strips
1/4 bengkuang-cut into strips
1 mandarin oranges-cut into wedges
2 tbsp thousand island dressing

MARINADE
2 tsp sand ginger powder (sha jiang powder-bought from Kwong Cheong Thye)
1 tbsp sesame oil
1 egg white
2 tsp sugar
1 tbsp cornflour
1 tsp chicken seasoning powder
1/2 tsp pepper

METHOD
1. Marinade chicken thigh with marinade for 30 minutes.
2.Pan fried chicken using happy call pan without adding oil.Pan fried till golden and cook.
3. Mix fresh fruits with thousand island dressing. Serve with chicken .Enjoy!

Paper Wrapped Chicken ( Chi Pow Kai )


 Cook this healthy version of Chi Pow Kai using my Happy Call Pan (Ocher the higher pan) no need oil to deep fried taste wise still as good and yummy too.
Before cooking my ready wrapped chicken. Just use deboned chicken thigh marinade it well,add spring onions and sliced young ginger.
