Pan -fried Pork with Oyster Sauce
Ingredients
200 gms lean pork -sliced
Marinade: 1 1/2 tbsp oyster sauce
1 tbsp light soya sauce
1 tbsp dark soya sauce
1 tsp Lea and Perrins sauce
1 tsp sugar
1 tsp sesame oil
1 tsp pepper
1 tbsp cornflour
Method
1.Marinade pork slices with the marinates for at least an hour.
2.Heat wok with 2 tbsp oil.
3.Add pork slices fry till cooked.
4.Sprinkle with a little sugar over the pork fry for a little while more.
5.Dish up and serve hot.

Coffee Chicken
Last week i bought a new recipe book Flavours From My Kampung by Bryan Ong.
I tried this coffee chicken recipe, not bad with a nice coffee aroma.
Ingredient
1 chicken
Spices Ingredient
2 star anise
2 cinnamon sticks
2 pandan leaves
30 gm ginger-sliced
Seasoning
1 tbsp instant coffee granules
4 tbsp light soya sauce
500ml water
1 tbsp rock sugar
1 tbsp dark soya sauce
1 tsp cornstarch water for thickening
Method
1.Put spices and seasoning ingredients into a wok and bring to boil.Lower the heat and simmer for 10 minutes.
2.Add in chicken cover with lid and simmer at low heat for 30 minutes.Turn over the chicken halfway through cooking.
3.Remove chicken cut into pieces and arrange onto serving plate.
4.Bring coffee sauce to boil. Thicken with cornstarch and pour sauce over chicken. Serve.

Grilled chicken with Korean Bbq sauce
Grilled chicken with Korean Bbq Sauce
Ingredients
1 chicken breast- remove skin and deboned cut into bite size pieces
2 tbsp Korean Bbq sauce
1 tsp sesame oil
1 tbsp ready fried sesame seeds
Method
1.Marinade chicken pieces with korean bbq sauce and sesame oil for at least one hour.
2.Can either pan-fried it till cooked or just poke through lidi stick and grill it for 15minutes till cooked.
3.Sprinkle some sesame seeds before serving.
A very simple recipe and delicious too.Jenny you can cook for your children i think Jason they all will like it.
Muah Chee
Ingredients A
250gms glutinous rice flour
375ml water
2 tbsp shallot oil
2 tbsp fried shallots crisps
Ingredients B
200gms peanuts (store bought peanut powder)(mix with sugar)
50gms fine sugar
1.Mix A and microwave on high 7 minutes in-between take out and stir.
2.After 7 minutes bring out and stir well.
3.Cut into pieces using a plastic spatula and coat with the peanut powder.
4.Serve with the fried shallot crisps.Enjoy.

3 pieces chicken thigh whole(score a few slit on the thigh)
Marinade:
2 tbsp tom yam paste
1 stalk lemon grass
5 shallots
2 cloves garlic
2 red chilli
4 pieces kaffir lime leaves(daun limau perut)
1 tbsp fish sauce
2 tsp honey
a pinch of salt
1/2 tsp sugar
Method
1.Wash chicken and pat dry.
2.Blend all the marinade ingredients together do not add water.
3.Marinade chicken thigh for at least 2 hours or overnight in fridge.
4.Preheat oven to 200 degrees celsius.
5.Wrap chicken with aluminium foil and bake for 30 to 35 minutes till cooked.
6.Serve hot with rice or noodle.
Not very outstanding dish but quite ok worth trying when you run out of idea what to cook cause quite easy just marinade and bake.Enjoy!

Blanch Vegetables with Miso Sauce
Ingredients
1 packet spinach/lady's finger
2 tbsp white sesame seeds- already fried
1 tbsp white miso
1 tbsp Thai chilli sauce
1 tsp sesame oil
Method
1.Boil a pot of water add 1 tsp oil and a pinch of salt to blanch the vegetables till cook.
2.Drain the vegetables well.
3.Mix sesame seeds,miso and Thai chilli sauce with some water from boiling the vegetables and mix well lastly add in the sesame oil.
4.Pour sauce over the vegetables and serve hot.
A simple and easy recipes and healthy too.Enjoy!

These are the dumplings i made today.The yellow ones are with sambal dried prawns,the one behind are nyonya and the other one is brown rice with herbal chicken. The brown rice dumpling is the best still haven't made the traditional 5 spice bak chang yet maybe next week.Enjoy!
Recipes for the Brown Rice With Herbal Chicken Dumpling
Ingredients A
400 gms Glutinous rice -wash and soak for half an hour150 gms Brown rice-wash and soak for half an hour
1 tsp salt
2 tbsp light soya sauce
1 tsp five spice powder
4 tbsp cooking oil
Ingedients B Filling
400 gms boneless chicken thigh meat-cut into bite size pieces
20 gms Dang Qui-soaked to soften,chopped finely
20 gms Qi zi-washed
30 gms white fungus-soaked to soften, cleaned and cut to bite size pieces
1 tsp salt
2 tsp chicken stock granules
1 tbsp light soya sauce
2 tbsp cornflour
Bamboo leaves 40 pieces--boiled to soften and wash clean
Hemp string
Method
1.Rice-Combine all ingredients A together.
2.Filling-Combine all the filling ingredients in a large bowl mix well and marinade for 30 minutes.
3.To made dumpling: Overlap two pieces of bamboo leaves, fold into cone shape.Fill cone with 1 tbsp rice then 1 tbsp filling, top up with 1 tbsp rice. Wrap and secure with string.
4.Boil dumplings in plenty water over medium heat for 2 hour.
